Peru 2019 here we come!

Pretty much from the day we met, Klaus and I have been sharing our bucket-list locations around the world that we want to visit.  Discovering that we have a shared desire to see many of the same places, we decided that every two years we will go on one big trip somewhere on our bucket list and in between those years we will do a super cool holiday somewhere local.  Last year we rented an RV and toured Germany, Austria, Slovenia and Croatia - truly a dream trip!  Then this year, we completed the incredible 6 night backpack hiking adventure in the Southern Chilcotin Mountains. After months and months of research (started pretty much the next day I got back from Europe), we have put down a deposit to reserve the first half of our trip to Peru, hiking the High Inca Trail in September 2019. Aug 8-14, 2018 - Southern Chilcotin Mountains

Another landmark first in my journey to a healthier me, backpacking in the remote South Chilcotin Mountains with myself, Klaus, Sylvia and Greg which started with a flight into Lorna Lake and hiking out from there to the Tyaughton Creek trailhead; taking us 6 nights and 7 days to complete. An incredible experience I will never forget. Being the typical type-A personality I am, I prepped for a couple of months ahead of time to ensure I could remain keto while also packing as light as possible with all the necessities.  I researched endlessly and prepared my own recipes of freeze-dried meals so all I had to do was add boiling water for an instant hot dinner.  Of course I documented all my hard work by creating a spreadsheet which tracked my calories, grams of protein and fat as well as my sodium intake for each day.
